Cheesy Chicken Fritters

Ingredients
24 oz Tyson boneless, skinless chicken breast 2 large Egg, fresh, whole, raw .33 cup Mayonnaise, regular (mayo) 1 tbsp Bob's Red Mill Coconut Flour (by BABYHUNT) 4 oz Mozzarella Cheese, whole milk 1 tsp Dill weed, dried .5 tsp Salt .125 tsp Pepper, black 2 tbsp Extra Virgin Olive Oil
Directions
1. Finely dice chicken and put in mixing bowl.
2. Add remaining ingredients and mix until well combined. Cover and refrigerate at least 2 hours.
3. Heat large skillet over medium heat and add oil. Add chicken mixture in heaping Tbl. Slightly flatten out. Cook uncovered 3-4 minutes on each side until golden brown and cooked through.

Serving Size: Makes about 20-25 fritters
