Vegetarian stuffed shells (high protein)

Ingredients
54 jumbo pasta shells16 oz fat free cream cheese24 oz fat free cottage cheese4 cups fat free shredded Mozzarella cheese1 tbsp olive oil1 onion, chopped10 oz shredded carrots16 oz mushrooms, chopped4 cloves garlic, minced1 Tbsp Italian seasoning16 ounces spinach, chopped2 packages Gardein Meatless meatballs, cooked and chopped3 jars Prego light smart marinara sauce1 tbsp Extra Virgin Olive Oil
Directions
Preheat oven to 350.
Cook jumbo shells according to package, decrease cooking time to make sure shells are al dente. Drain and rinse in cold water.
While shells are cooking, place 1 tbsp olive oil in nonstick pan with onions and carrots, saute until starting to soften. Add mushrooms and garlic. Continue cooking until garlic is fragrant. Add chopped spinach, cook until spinach is wilted. Let cool.
In a bowl, mix cream cheese, cottage cheese, and Mozzarella cheese. Add vegetable mixture and meatless meatballs. Combine.
Using a spoon, stuff the shells with the mixture and place in oven-safe baking dish. Pour pasta sauce on top. Cover and bake for 20 minutes. Serve.
