0.5 cup, chopped Onions, raw0.25 cup Butter, salted0.25 cup flour unbleached12.0 oz Almond Breeze Almond Milk, Original, refrigerated2.0 serving Pacific Natural Foods Organic Low Sodium Vegetable Broth, 1 cup2.0 cup, chopped Broccoli, fresh1.0 cup, chopped Carrots, raw0.25 tsp Salt0.5 tsp Pepper, black0.25 tsp Nutmeg, ground1.0 cup Cheese, sharp cheddar, grated0.5 cup, fluid (yields 2 cups whipped) Heavy Whipping Cream
Saute onions in a little butter, set aside.
In large pan melt butter and add flour, mix. Slowly add milk, then stock. Let simmer 20 minutes.
Add broccoli, carrots, and onions cook on low for 25 minutes. Season with salt, pepper, and nutmeg.
Puree in blender or submersion blender, return to pan and add cheese til melted.
