pinto beans, dominican style

Ingredients
Onions, raw, .5 cup, chopped Green Peppers (bell peppers), 0.5 cup, chopped Hot chile pepers, 1 pepper Canned Tomatoes, .5 can Tomato Paste, .25 can (6 oz) Cider Vinegar, 1 tbsp pepper, black, 1 dash adobo goya, 2 tsp pinto beans (dried from package), 2 cup Plantains, 1 cup slices Olive Oil, 2 tbsp 3 cloves of garlic chopped or smashed in mortar (pilon)
Directions
Preparation time should include time for beans to cook.
Clean and rinse beans from package. Put one tsp bakig soda and let beans soak for 30 / 30 mins. Drain water and rinse beans. Put beans in pressure cooker and cook for 15 minutes or until tender.
In a teflon pan, cook onions, garlic, peppers until onion is transparent. Add tomatos, tomato paste and spices, stir, add pinto beans, plantain (peeled and cut in pieces) and cook for 15 minutes.Adjust seasoning to taste.

Note, I usually put in the pressure cooker a whole package of beans, tenderized and after done, split beans in two cook and season one and freeze the other half. You could also season all and freeze 1/2 recipe for later use.
