Spanish Rice

Ingredients
1/2 cup chopped onion1/2 cup chopped green sweet pepper1 clove garlic, minced1 tbsp olive oil1 tsp chili powder1 28-ounce can tomatoes, undrained and cut up3/4 cup uncooked brown rice1 4-ounce can diced green chile peppers, undrainedSeveral dashes bottled hot sauce (optional)
Directions
In a large skillet cook onion, sweet pepper, and garlic in hot oil until tender. Add chili powder; cook 1 minute more. Stir in undrained tomatoes, rice, chiles, hot sauce, 1 cup water, 1/4 tsp salt and 1/8 tsp black pepper. Bring to boiling; reduce heat. Simmer, covered, about 20 minutes or until rice is tender and most of liquid is absorbed.

    That's the thing - I've had to eyeball it. I'd say maybe 3/4 cup? I'm not sure. The book I borrowed it from doesn't specify, and I know how frustrating that is. I'd try to eyeball it though.

    I added some crushed red pepper, cumin and used no sodium added tomatoes and we loved it - 7/18/08
