Flounder and Snaps in a Packet

3 cups sugar snap peas or snow peas2 Tbsp. lemon juice2 tsp. olive oilsalt and pepper to taste (other herbs may be used)4 Flounder (or other fish) fillets, 6 ounces each
1. Preheat oven to 400F, or prepare gas or charcoal grill.
2. In a bowl toss together peas, lemon juice, olive oil, salt, and pepper.
3. Coat 4 15-inch lengths of parchment paper or foil with cooking spray. Place each fillet on one-half of the paper. Top with about 3/4 cup of the pea mix. Fold the paper over the fish and peas and seal by folding over all edges.
4. Place the packets on a baking sheet or directly onto the grill and cook for 10 to 12 minutes.

I prepared this as directed except addition of 1 TBS chopped leeks. I cooked it for the time listed and the fish and peas were still quite raw, put in for additional time and after 25 minutes the fish was cooked but the snap peas were still quite raw. It was ok, but nothing to rave over. - 5/3/14
