1 pound ground beef1/4 cup onion, chopped5 cups whole wheat rotini, uncooked1 (14.5 oz) can diced tomatoes1 (6 oz) can tomato paste 1 package (10 oz) frozen spinach (thawed)1 (24 oz) jar tomato pasta sauce 1 cup water1/2 tsp pepper1 tsp oregano1/2 tsp garlic powder1 cup shredded mozzarella cheese20 oz Cottage Cheese, 2% Milkfat
Brown the ground beef and onions over medium heat in large skillet. Drain the beef when cooked through
Add rotini, diced tomatoes, tomato paste, spinach, pasta sauce, water, and spices. Stir and cover. Reduce heat to medium low. Cook until pasta is al dente (15-20 minutes)
Stir in cottage cheese. Sprinkle mozzarella cheese over the top. Cook until mozzarella cheese is melted. Serve
