1 serving Chicken: Purdue Ground Chicken Breast, 3 oz cooked/serving (by SONNYG1) 43 gram Wholesome Pantry Quinoa 1/4 cup/43g (by TWOCHICSENL) 0.5 cup Nature's Promise organic vegetable stock (by KENNYWHEELS) 2 clove Garlic .25 cup, chopped Onions, raw 0.5 cup Diced Tomatoes & Green Chiles, RO*TEL (by JERTEX) .5 tbsp Extra Virgin Olive Oil
Add 2 cups of chicken/veg broth to 1 cup of quinoa and cook for 15-20 minutes.
Add onion and garlic to hot pan with oil. Cook until it is translucent. Then add the chicken for an additional 6-7 minutes. Add quinoa and 14 oz of diced tomato with green Chile. Let simmer for about 10 minutes to let the tastes mix.
