1/2 cup small diced cucumber, with peel1/2 avocado, small dice1/4 cup sweet yellow corn, canned1 tbsp small diced onion1tsp lemon or lime juiceSalt and pepper to taste
Mix diced ingredients and corn in small bowl. Add fresh squeezed lemon or lime juice and salt and pepper to taste. Toss gently as to not mash avocado. Best to let sit in fridge for 15 min or so before serving
