Risotto Salad

Ingredients
1 1/2 cups arborio rice (risotto)1 small onion, chopped3 Tbls olive oil3 cups chicken broth2 tbsp grated parmesan cheese1 can tiny shrimp, rinsed and drained3 oz. cooked, chopped chicken breast1/2 cup black beans, drained and rinsed1/4 cup each: chopped green pepper chopped red or orange pepper chopped red radishes chopped carrots chopped celery6 Tbls Newman's light Balsamic Vinaigrette
Directions
Saute chopped onion in large pan until soft, add rice and stir until evenly coated with oil. Add 1/2 of the heated broth, stirring continually. Maintain a slow boil and add the rest of the broth (a little at a time), while stirring continually. When the broth has been absorbed, stir in the cheese and black pepper to taste. Chill. Add remaining ingredients. Makes 6 servings.
