16oz. Penne Rigate Pasta1 Tbsp. Olive Oil1 Green Pepper, coarsely chopped2 Tbsp. Garlic, chopped29oz. can of Spaghetti Sauce14.5oz. can of Italian-style Stewed Tomatoes14oz. can of Quartered Artichoke Hearts3.8oz. can of Sliced Black Olives
Saute green pepper and garlic in olive oil until soft. In a separate pot, heat tomato sauce and stewed tomatoes until heated through. Add sauteed pepper and garlic to sauce, along with artichoke hearts and olives. Heat through. Pour over pasta and mix well. And if you're feeling saucy, you can also sprinkle a little bit of parmesan cheese on top ;o)
This is a recipe I made up, so I'm not really sure how big each serving is, but I'm going to guess and say about 1-1/2 cups.

This recipe was simply delicious! Due to sodium restraints, I left out the olives, and didn't have artichoke hearts handy so used summer squash and eggplant instead. Also used no-salt-added diced tomatoes instead of the italian stewed.....even making those changes, this was an awesome dish! - 8/21/08
