BLE Apple Coffeecake

9 oz mashed Banana. (about 3 small to medium bananas)3 oz Nut Butter (about 6 tablespoons - or about 1/3 cup)3 large Eggs3 oz Quick Oatmeal ( a little less than 1 cup)1-1/2 tsp Cinnamon, ground 1-1/2 tsp Baking Powder 1/4 tsp Salt 9 oz chopped peeled Apples (2 cups ?)
Preheat oven to 350. Grease a 8x8 pan (I used a glass baking dish) with butter or shortening or spray with nonstick spray.
Beat together the banana and nut butter (I used almond - you can use peanut or any other nut butter). Beat in the eggs. Then stir in the oatmeal, cinnamon, baking powder, and salt. Let stand for a few minutes while you peel and chop the apples. Stir in the apples and spoon into the prepared baking dish. Bake at 350 for 30 to 35 minutes or until done. Let cool and cut into 12 pieces.
(Note: 4 pieces would make a complete BLE breakfast)
Double the recipe to bake in a 9 x 13 pan. You would probably have to bake it a little longer.
