chicken avocado summer rolls

Ingredients
2 6' rice paper skins softened3 oz boneless skinless cooked chicken breast1 medium carrot juliennedjuice of 1/2 lime1/2 avocado peeled and diced1 tbsp thai chili sauce
Directions
Julienne carrot
cut cooked chicken in to strips
Dice avocado and mix with lime juice to prevent discolouration
soften each rice paper skin in warm water until pliable, pat dry
For each skin, place 1/2 of chicken, carrot and avocado on the bottom 1/3 of the skin
Roll up from bottom tucking sides in till completely rolled
Slice each roll in to 3 pieces
Serve with chili sauce for dipping
Makes 6 2 inch pieces serves 3
