Seafood Mango Avocado Salad

2 cup Orzo Pasta 7.5 oz Shrimp, cooked 2 unit 2 large or 5 small Scallops, raw 1 serving One Large Fresh Mango (Fresh Fruit) (by MICHAELA38) 1 serving Avocado * - From Chile (1 avocado) 4 cup Baby Spring Greens Mixed 8 oz Tomato, grape (3oz = appro 12 tomatoes) 0.5 cup Red Onion Raw (1/4 cup, 40g or 1.4oz) 100 grams Cilantro, raw 4 tbsp Extra Virgin Olive Oil 30 mL Lime Juice .5 tsp Salt .5 tsp Pepper, black 1 clove Garlic
Prepare dressing: Olive oil, lime juice, garlic and salt/pepper. Set aside.
Cook orzo according to package directions.
Blanch raw shrimp and scallops.
Cut mango and avocado into 1/2" cubes.
Halve the grape tomatoes.
Finely dice onion.
Chop cilantro.
Toss all salad ingredients in a large bowl.
Add dressing and toss again.
Serving Size: Makes 6 servings
