Slow Cooker Beef Roast w/ Veggies

Ingredients
2-3 lb. beef shoulder roast, trimmed & washed1 can beef broth (or make with cubes)1 can water1 can cream of mushroom2 cans whole peeled potatoes10 baby carrots (or 2 chopped carrots)2 Tbs. (or less) salt1 Tbs. onion powder
Directions
Wash and trim roast. Salt and season one side of meat and place seasoned side down into crock pot. Salt and season top of meat and let sit about 5 minutes while you prep. veggies and open cans. Dump soup, broth, and water over meat. Cook on high for 1 hour and flip meat. Cook on low for 6 hours. Add veggies and cook additional 1 hour or until veggies are tender. Makes 6 generous portions. Leftover meat makes WONDERFUL sandwiches!
