Zucchini Bread

Ingredients
4 eggs3 cups sugar1-1/2 cups oil2 teaspoons vanilla3 cups zucchini, grated3 cups flour1 tbsp baking soda1 tsp baking powder1-1/2 tsp salt3 tsp cinnamon1 tsp grated orange peel
Directions
Beat eggs until frothy. Add sugar, oil, and vanilla; beat well until thick and lemony color. Stir in zucchini. Sift together flour, baking soda, baking powder, salt, and cinnamon. Add to zucchini mixture. Fold in orange peel. Pour into two greased 9 x 5 inch loaf pans. Bake at 350 degrees for 55 to 60 minutes or until done. Let cool 10 minutes before removing from pans.
