Introduction

Ingredients

    1 box Carrot Cake mix
    3/4 cup pumpkin
    2 zucchini, grated
    1 cup applesauce
    1/2 cup skim milk
    2 eggs
    1 packet instant oatmeal (apple cinnamon is best)

Directions

In a large mixing bowl, blend the dry cake mix, pumpkin, zucchini, and apple sauce. Add Milk, eggs, and oatmeal packet.

Pour into large bundt pan. (Or muffin pans-- makes 2 dozen).

Bake at 350 F for 35 minutes, or until an inserted knife comes out clean.

(Noted time is for bundt pan. If making muffins, bake at 350 for 18 minutes, or until knife comes out clean).

    Fantastic! So moist and yummy it doesn't taste "healthy" , and it was so easy to make! I made this as described, but didn't have any instant oatmeal so I used 1/2 cup of old fashioned oats and a healthy sprinkling of cinnamon. Baked in a 13" x 9" pan and the time worked out the same. - 5/27/13

    The one negative comment is that zucchini come in lots of sizes. How about stating the amount of grated zucchine in cups instead? - 2/28/09
