This looks like something I would like to make, but I'm surprised that the fiber content is that low. I guess it could be upped with a couple of additions like shredded carrots and old-fashioned oatmeal.

Super great! Wonderful texture and a great combination of veggies. I used egg substitute and they turned out great and even less colesterol and fat. Great for breakfast and snacks on the go. Perfect fit for my busy lifestyle.
Awesome, I don't like zucchini, but you can't even taste it in this recipe. I added Fiber Sure to it to give it an extra boost of fiber. Thanks for submitting it! :)
