Breakfast Apple Rice

Ingredients
2 cups cooked brown rice1 apple, cored and chopped1/3 cup apple juice1/4 cup pure maple syrup2 tsp fresh lemon juice1 tsp vanilla extract1/2 tsp ground cinnamon
Directions
Preheat oven to 350 degrees.

Combine all ingredients in a casserole dish with a cover. Bake in a conventional oven for 45 minutes or in a microwave oven for 10 minutes at full power, stirring once halfway through the cooking time. Serve hot.
