Carrot Cheesecake Bars

1.5 cup, crushed Graham Crackers, plain, honey, or cinnamon0.25 cup Butter, salted1.0 cup Granulated Sugar24.0 oz Cream Cheese0.75 cup, grated Carrots, raw2.0 tsp Cinnamon, ground0.75 cup Sour Cream3.0 large Egg, fresh, whole, raw
Mix Graham crackers, melted butter, 1 tsp (or to taste) cinnamon, and 1/3 cup sugar. Press into 9x13 pan and bake at 325 for ten minutes.
Beat with mixer cream cheese, remaining sugar, and cinnamon. Add sour cream. Slowly beat in one egg at a time.
Finely grate carrots and fold into cream cheese mixture. Pour over crust. Bake 35-40 minutes until middle is almost set.
Allow to cool completely, and then refrigerate minimum of four hours.
