No Pasta Salad

Ingredients
1 cup small cauliflower florets1 cup baby carrots, halved1 cup mushrooms, cut into small pieces2 T water1 cup snow peas, cut14 oz can artichoke hearts, cleanned & cut1/4 cup sliced ripe olives1/4 cup garbanzo beans, rinsed1/4 cup frozen green peas3 green onions, sliced2 6-oz cans water packed solid white albacore3 oz cheddar cheese, diced1 C light done right italian dressing1/4 cup grated parmesan cheese1 t lemon pepper
Directions
Combine cauliflower, carrots, mushrooms and water in a bowl. Cover tightly and microwave 5 minutes. Let stand for 3 minutes, covered. Drain completely. Combine with remaining ingredients and mix thoroughly. Refrigerate overnight. Makes 4 (1 1/2 C servings.

    This is in the Curves member Guide I would not recommend this recipe to anyone it was a waste of money to me. - 1/28/08
