Broccoli Cheese Soup (Panera)

2 tbsp Butter, salted 1/2 medium onion, diced finely2 cups chicken stock or broth2 cups chopped broccoli1 cup carrot, chopped1/4 teaspoon nutmeg (optional but brings out the flavor)1 tsp salt1/2 tsp pepper2 cups milk1/4 cup cornstarch1/4 cup water8 ounces grated sharp cheddar cheese (2 cups)
Melt butter, add onion and cook until translucent.
Add chicken stock, broccoli, carrots, nutmeg, and salt and pepper. Cook until veggies are tender.
Add milk. Bring back to boil.
Mix cornstarch and water. Add to boiling soup. Stir constantly until thick. (add more if needed)
Add cheese.
