Chimichurri

Ingredients
1 cup fresh flat-leaf parsley leaves1/4 cup fat-free, low-sodium chicken broth2 tablespoons extra-virgin olive oil2 tablespoons white wine vinegar1/2 teaspoon dried oregano1/4 teaspoon salt1/8 teaspoon freshly ground black pepper6 garlic cloves1/2 cup shredded carrot1/2 cup minced fresh onion
Directions
Combine parsley and next 7 ingredients (parsley through garlic) in a blender; process until smooth. Pour into a bowl; stir in carrot and onion.

Serve over meat (pork, beef even chicken).
