Veal Marsala

1 dash Pepper, black 1 dash Salt 1 tbsp Olive Oil 1 fl oz Lemon Juice 200 Onions, raw 1 glass (3.5 fl oz) Red Wine 270 gram(s) Veal (rose escalope) 10 gram(s) asda smartprice self raising flour 400 grams Mushrooms, fresh 15 grams Butter, salted
Heat pan. Fry onions in olive oil. Move to a plate once browned.
Season veal both sides, coat in flour - fry in onions pan, turn once browned - 4-5 minutes in total.
Remove from pan and keep warm.
Heat butter and fry mushrooms (add salt to draw out the water).
Add chicken stock and wine, bring to boil and lower to a simmer until mixture reduced by about half.
Stir in the lemon juice and season to taste.
Return veal to pan and warm through.
