Nigerian Vegetable Fish Sauce

Ingredients
2.0 cup Ugwu (Nigerian Pumpkin Leaf)1.0 cup Amaranth Greens0.75 cup, chopped Onions, raw5.0 pepper Hot Chili Peppers1.0 fillet Mackerel (fish)5.0 1tsp Palm Oil100.0 gram Cow skin (pomo, kponmo)
Directions
Boil and debone fish. Break into small chunks. Keep the water. In a separate pan, sautee onion and pepper in oil. Add fish and veggies and a few tablespoons of the water from boiling the fish. Cover and simmer until dry. Season to taste.
