Nicole's Lemon Curd

3.0 large Egg, fresh, whole, raw0.75 cup Granulated Sugar0.75 cup Lemon Juice1.0 tbsp Lemon Peel0.5 cup Butter, unsalted
1. Wisk your eggs until fluffy.
2. Wisk lemon juice and zest into eggs.
3. Wisk sugar into egg and lemon mixture.
4. In a 2 quart sauce pan, heat about 2 inches of water until simmering. Place an aluminum bowl that will nest into the sauce pan (Dutch oven).
5. Keep your heat at a steady simmer while continuously stirring.
6. When your mixture starts to thicken slightly begin adding the butter in cubes until fully combined.
7. Continue stirring until the mixture is thick enough to stick on a wooden spoon.
8. Remove from heat, allow to cool and wrap bowl pressing saran wrap on the curd to prevent a skin from forming. Allow to chill for at least one hour.
9. Stir well and enjoy!
