Pepperoni Pizza Rice Dish

Ingredients
4 c. cooked brown rice1/2 c. Egg Beaters1/4 c. grated Parmesan1 tsp. oregano1 jar Ragu spaghetti sauce4 oz. sliced turkey pepperoni1/2 c. canned sliced mushrooms1/2 c. green pepper, diced1/2 cup onion, diced1 pk (8 oz) shredded mozzarella
Directions
Cook rice. Combine rice, Egg Beaters, Parmesan, oregano. Mix well. Spread in 9x13 pan. Bake at 350 until firm. Spread spaghetti sauce over rice. Top with pepperoni, green pepper, onion, mushrooms. Cover with mozzarella cheese. Bake 15 more minutes, or until hot and bubbly. Makes 8 servings.
