Chicken and Spinach with Beans

Ingredients
4 tbsp Extra Virgin Olive Oil 2 cup, chopped Carrots, raw 450 grams Roasting Chicken, dark meat 4 clove Garlic 10 cup (8 fl oz) Chicken Broth 12 oz Dole Baby Spinach Salad 3.5 cup Bush's Black Beans .5 cup Parmesan Cheese, grated 16 tbsp Basil 1 tsp Salt 1 large Onions, raw
Directions
Using 2 tablespoons EVOO sautee Vegetables except Spinach, Add cooked chicken, beans and broth, Bring to a boil reduce to simmer and add spinach. In blender use 2 Tbls EVOO and add Basil and Parmesan. Process to a paste and add to pot. Salt to taste and serve. Best if sits for 24 hours and heat to serve.
