Pesto Zucchini Pasta

Ingredients
2 ozs dry Whole Wheat Pasta1 Small Summer Squash - sliced very thin1 Med. Zuke - sliced very thin1 Med. Onion - chopped2 Tbsp Pesto - pref. freshFeta (optional) 2 Cloves Garlic1/2 cup Chicken Broth1 Tbsp. EVOO
Directions
Put water on to boil for pasta. Add EVOO to skillet, add onions on low heat. Add garlic chopped. When onions begin to turn translucent add zukes and squash. Add chicken broth. Add pesto. Simmer slowly until squash is cooked. Toss with cooked pasta and top with feta. Makes 2 servings.

    My only issue with this is that the chicken broth is obviously not acceptable for vegetarians. I substituted vegetarian vegetable broth (not all veggie broths are vegetarian) and it still tasted awesome. - 1/2/09
