German Potato Salad

Ingredients
3 lbs small red potatoes (1361 g)1/2 c sugarsalt and pepper to taste1/2 lb bacon dut into bite-sized pieces3 medium-sized onions, finely chopped3 tbl flour2 cups waater3/4 c white or cider vinegar
Directions
Boil potatoes in skins; let cool. Remove skins and slice potatoes in layers in a bowl. Sprinkle sugar, salt and pepper over each layer.
Fry bacon and onions together until onions are transparent and bacon is not yet crisp. Remove bacon and onions with a slotted spoon and place on top of sliced potaotes.
Use 3 tbl bacon drippings in the pan and stir in flour. Gradually add the water and cook until thickened. Add the vinegar and cook to a gravy consistency. Pour hot mixture over the potatoes, bacon and onions. Mix gently. Let stand a few hours so flavors blend. Serve warm.
