Curried Rice with Tofu

5 cups cooked brown rice (basmati is best)3 medium squash, zucchini and/or yellow1 medium onion diced1 clove garlic1 red pepper cut into short strips1 block extra firm tofu1 cup nonfat milk1tbsp. butter1tbsp. flour, white or whole wheat1 tblsp curry paste4 tblsp curry powdersalt to taste
1. Melt the butter in a saucepan, add the flour to make a paste, then add the milk and cook until thickened into a white sauce.
2. When sauce is thick, add curry paste, mix well, and turn off heat.
3. Spray a nonstick skillet with Pam, heat to medium high, and add vegetables and tofu. Sprinkle with 2 tblsp. of curry powder while cooking.
4. When vegetables are crisp/tender, add the cooked rice and 2 more tbsp. of curry powder. Stir ingredients in skillet well to mix.
5. Add the curry sauce mixture from the saucepan and mix well.
6. Heat through and serve.
