Stir Fry Eggs and Turkey

Ingredients
1/2 a cup of Egg Beaters1/2 a cup of 1% milk1 tbsp of canola oil1/2 a sliced Zucchini1/2 a chopped Red Pepper1 Shallot chopped and diced4 thin slices of cooked turkey breast meat, chopped.
Directions
Makes 2 servings.

Prepare the vegetables on a plate and mix together.

Heat a frying pan on a high setting, adding the canola oil.
Beat the egg beaters and milk together in a jug or bowl.
When the frying pan is hot enough, add the egg mix. As it cooks, roll the mixture around the sides to make sure it reaches the pan.
After about a minute, add the veggies and turkey breast and stir. Add soy sauce if you wish.

Keep stirring, making sure all the egg mix is thoroughly cooked. Fry for about 5 mins or until done.

Turn off heat and serve.
