2 clove Garlic 1 cup vegetable Broth 3.5 cup Diced Tomatoes 2 cup, chopped Onions10 oz Green Chiles 5 Tbs Light Butter 2 cup, sliced carrots1 cup, diced Celery 2.5 cup White Rice 1 tsp Cumin seed 1 tsp crushed red pepper flakes 1 tsp Chili powder
• Melt butter in a large nonstick skillet over medium-high heat
• add onion and garlic; sauté 5 minutes.
• Stir in rice; sauté 1 minute.
• Add diced tomatoes, green chiles and broth.
• Bring mixture to a boil; cover, reduce heat, and simmer 20 minutes.
