1 1/4 cups sugar substitute1/4 cup unsweetened applesauce1/4 cup fat free margarine, softened1/2 cup fat free egg substitute1 1/2 cups mashed very ripe banana's(3 to 4 medium)1/2 cup reduced fat buttermilk1 tsp vanilla2 1/2 cups all pupose flour1 tsp baking soda
Heat oven to 350. Grease bottoms only of 2 small loaf pans or 1 large loaf pan, or make into muffins.
Mix sugar sub., applesauce, margarine in large bowl. Stir in egg sub. until well blended. Add bananas, buttermilk, and vanilla. Beat until smooth. Stir in flour, baking soda until moistened. Pour into pans.
Bake small loaves for one hour and large pan for 1 1/4 hours or until toothpick inserted in center comes out clean. Cool 10 minutes.
Wrap tightly and store at room temperature up to 4 days or refrigerate up to 10 days.
