Zucchini Muffins

Ingredients
1 1/2 cups whole wheat flour1 cup sugar1/4 baking powder2 tsp cinnamon1/2 tsp baking soda1/4 tsp nutmeg1/4 cup fat-free sour cream2 egg whites1/4 cup milk1 cup zucchini, grated
Directions
Place muffin cups in muffin pan and preheat oven to 350.

Sift flour, sugar, baking powder, cinnamon, baking soda, and nutmeg in a mixing bowl. In another mixing bowl, combine zucchini, sour cream, egg white, and milk. Mix dry and wet mixtures together until mixture is relatively smooth. Fill muffin cups approximately 2/3 full. Bake for 24-28 minutes or until muffins are golden brown and bounce back when pressed.

Can also spread some butter substitute on these for added indulgence!
