Pork Vegetable Stew

Ingredients
12 ounces Pork tenderloin, trimmed and lean1/10th of a cup of flour 1 Medium onion, diced1 - 8 oz. package Mushrooms 1/2 cup of milk1/2 cup chicken broth1/2 a 10 oz. package of mixed veggies2 tbsp canola oil1 tbsp margarine or butter
Directions
Cut pork up onto 1 inch pieces. Using a large skillet, start browning pork in oil. Once slightly brown all around add mushrooms and onions to pan, cook until onions are soft.
Add butter and flour and cook for 2-3 minutes until flour is absorbed.
Add milk and chicken broth and stir briskly with a fork. Add frozen veggies. Bring to a boil, then lower to medium-low heat, cover and simmer for 15-20 minutes or until pork is cooked through. (Stir periodically to avoid burning)

Serve with rice or over potatoes.

Makes about 3 1-1 1/2 cup servings
