Monterey Beef & Rice

Ingredients
1 lb. lean ground beef2 tbsp Chili powder 1 medium Onion, chopped1 med. green bell pepper, seeded and chopped1 15-oz. can diced tomatoes, no salt added 3/4 cup Botan Calrose Rice (or other sticky rice) 1 tbsp Kikkoman Less Sodium Soy Sauce 1 small can sliced black olives, drainedOptional: 1/4 cup shredded cheddar cheese
Directions
Heat large frying pan over high heat. Add beef and chili powder. Saute 3-4 minutes, or until beef is browned and cooked through. Add onion and bell pepper; saute 1 minute longer. Stir in tomatoes (undrained), 3/4 cup water, rice, and soy sauce. Bring to a boil. Reduce heat to low; cover and simmer 25 minutes, or until liquid is absorbed. Stir in olives. Remove from heat; let stand, covered, for 10 minutes. Portion each serving and sprinkle each with 1 tbsp of cheese (not included in nutritional information). Garnish with cilantro if desired.
