White beans with gammon

Ingredients
half cup chopped onion2 tsp olive oil300g gammon steak cut in dice4 cups mixed vegetables3.3 cups (2x400g tins) tomatoes_ chopped small, include juice from tins3 cups cooked navy/cannelini/white kidney beans 200g raw)herbs to taste_ herbes de provence and a little garlic work well
Directions
saute the onion until transparent and add the diced gammon, cook until turning opaque and add the mixed vegetables, the chopped canned tomatoes, the herbs to taste and the beans. Simmer for about 20 minutes until the gammon is cooked and the vegetables are tender
