Ingredients
1/3 cup Olive Oil 1 eggplant, peeled (yield from 1-1/4 lb) Eggplant, fresh 1.75 cup Chickpeas (garbanzo beans) 2 tsp curry1 tsp ginger1 tsp powdered garlic
Directions
Roast eggplant and chickpeas with other ingredients at 425 for approx. 25 minutes. Stir once.
