Easy Beef Enchiladas

Ingredients
16 oz Ground beef 1 oz GV Taco seasoning package (by WHITNEY_25) 2.5 cup Enchilada Sauce (Old El Paso Mild) (by ABSTRACTBUG) 1.25 cup Tomatoes, red, ripe, canned, with green chilies .5 cup, shredded Cheddar Cheese 1 cup Colby and Monterey Jack Cheese shredded 9 serving TORTILLAS, Flour, MISSION Fajita 6 inch, 32g
Directions
1. Cook beef until no longer pink. Drain and stir in Taco Seasoning (with water according to pk.) and Rotel (tomatoes w/ green chillies), simmer for 10 mins.
2. Spray a 9x13 baking pan with cooking spray. Spread 1/2 cup enchilada sauce on bootom of pan.
3. Scoop about 1/4 cup of beef mixture on each toilla and then sprinkle with cheddar cheese. Roll up and place seam side down into pan.
4. Once all totillas are rolled, pour remaining sause evenly on top of tortillas and top with remaining cheese.
5. Bake for 20-25 mins at 375
