COLE SLAW-SUMMER SLAW WITH APPLE

Ingredients
4 cup, chopped Cabbage, fresh shredded.5 cup, chopped Carrots, raw shredded2 tbsp Extra Virgin Olive Oil 2 lemon yields Lemon Juice 1 medium (2-3/4" dia) (approx 3 Apples, fresh with skin chopped1 tbsp Honey
Directions
Shred Cabbage and carrots
chop apple into small chunks
Juice 2 lemons
whisk together Honey, olive oil, and lemon juice.
Mix all ingredients in a bowl. Cover, refirgerate and let marinade a few hours before eating

You can substitute Limes for the lemons for another refreshing variation
