Sausage spinach cheese frittata

12 serving 1 Egg- large, fresh 1.25 cup Ricotta Cheese, part skim milk 0.25 cup Parmesan Cheese, grated 6 link, 4/lb Italian Sausage, pork 3 potato (2-1/3" x 4-3/4") Baked Potato (baked potatoes) 2.5 tbsp Butter, salted 3 cup Spinach, fresh 2 cup, pieces or slices Mushrooms, fresh 3 oz Romano Cheese
Cook Sausage and Slice in into 1/4 inch pieces when cool.
Microwave potatoes. let cool. Slice into 1/4 pieces.
Saute vegetables to add
Combine eggs and parmesan cheese. Stir in ricotta leaving some lumps.
Line bottom of oven safe skillet with potatoes and sausage.
Top with sauteed veggies
Pour in Egg mixture
Cook on stove top , medium heat unit until edges are firm
Place pan in oven at 350 for 2o min or until firm in center
Serving Size: 10-12 depending on slice
