Ingredients
2 cup nature's eats blanched almond flour 3 large Egg, fresh, whole, raw 1/2 cup Sour Cream 2/3 cup Stevia Sweetener, all purpose - Natural Mate or low carb sweetener of choice1.5 tsp Baking Powder 3 tsp Lemon Juice 'Real Lemon' 100% juice 1 tbsp Lemon zest, grated (by SEPHONEE) 1 tsp Vanilla Extract 3/4 cup Blueberries, fresh
Directions
Preheat oven to 350 degrees. Blend the eggs for a few minutes until they are frothy and. have increased in volume. Add the wet ingredients - sour cream, lemon juice, lemon zest, and vanilla extract and blend into the eggs. Then add the dry ingredients - almond flour, baking powder, sweetener - been until combined. Line muffin tins and divide batter equally to make 12 muffins. Bake for 25 minutes or until lightly browned.
