Yogi Soup

Ingredients
3 vine-ripe tomatoes1 cucumber with peel1/2 avocado 3 stalks of fresh basil2 Tablespoons of lemon juice2 Tablespoons of olive oil (extra virgin, first cold pressed)1/4 teaspoon of cuminOptional, any combination of:1/4 cup prepared bulger wheat (or other whole grain)1 bell pepper1 bunch parsley, chopped2 stalks chopped celeryplain yogurt (added to individual servings)Sunflower seedsPine nutsSlivered almonds
Directions
Wash and dice the tomatoes, pepper, and cucumber. Peel and dice avocado. Coarsely chop the basil.

Place all ingredients in a bowl, add the lemon juice, olive oil, and cumin and mix.

Cover and refrigerate several hours so flavors can mix. Serve cold.
