paneras broccoli cheddar soup

Ingredients
1 tbls lite butter1/2 medium onion1/4 Cup melted butter1/4 Cup flour2 cups 2% milk2 cups low sodium chicken stock1/2 lb broccoli1 cup carrot, Julienned1/4 tsp nutmeg8 oz sharp cheddar cheese
Directions
In a large pot melt 1 tbls butter and saute onion and carrot until onion is softened. add remaining butter and flour to make rouge add milk chicken stock and broccoli simmer for 25-30min add cheese and stir in figure 8 motion to melt sprinkle nutmeg and enjoy! this recipe makes 4 servings serve with crusty bread!
