Meatless Goulash

Ingredients
2 cups of macroni, enriched or could use Whole wheatBlack Beans one can drained but not rinsedOne can of Mexican Stewed TomatoesSaltPepper or any other flavoring you want or need.
Directions
Cook the macroni, drain. Put back in the same pot and add the beans and Stewed Tomatoes, I kind of break up the tomatoes, you could also use diced tomatoes with any seasoning or flavors, add seasoning. Heat up and enjoy. Can add Fat Free or Low Fat Shredded Cheddar Cheese as a topping, but that in not included in the count.

    I made this last night and took it our Shabbat Oneg dinner along with the spanich rice RKspicy had listed and boy what a HIT!! Home Run. I did change the black beans to Pinto and added some Red and Yellow peppers. Thanks RKspicy. - 5/2/09
