Tomato Scramble

Ingredients
3 1/2 1tsp Olive Oil 1/2 large whole (3" dia) Red Ripe Tomatoes 1/2 Tbsp. chopped Shallots 1/3 cup Egg substitute, liquid (Egg Beaters) 2 Tbsp. Fresh basil
Directions
1 Heat a large nonstick skillet over medium heat. Swirl in 1 1/2 tsp. of the oil and add 1/2 of the chopped tomato and the shallots; cook 4 minutes. Put in a bowl and set aside.

2 Clean the pan; reheat pan and swirl in remaining 2 tsp. oil. Add the egg substitute and basil; scramble. Top with tomato mixture.
