Sara's Spanish Style Rice

Ingredients
1 Cup White Rice long grain1 TBSP Coconut Oil3 Scallions cut up (green onions)3 cloves of garlic diced8oz can tomato sauce2 cups water1 Tbsp chili powder1 tsp cumin seeds1/2 tsp oregano1/2 cup diced tomatoes
Directions
Heat coconut oil in pot over medium heat. Add rice, green onions, garlic. Cook until rice is opaque. Add remaining ingredients bring to a boil then cover and simmer 20 mintues until liquid is absorbed.
