    3 TBSP - EVOO
    1 cup chopped - Spanish or Red Onion
    3 chopped Garlic Cloves
    1 chopped Red bell Pepper
    1 large carrot chopped
    1 chopped Jalapeno pepper (seedes removed)
    1 can (15.5 oz) Black beans - drained and rinsed
    1 1/2 cups Brown Rice
    1 cup Chicken Broth or Vegetable Broth
    1 1/2 cups water
    Salt & Pepper to taste


Saute onions, garlic, red pepper, carrots, jalapeno in pot with EVOO, about 5 mins. Add Brown Rice and cook together for another 5 minutes. Add Black beans, chicken/veggie broth and water and simmer until rice is soft and fluffy. Add Salt & paper to taste
