Ingredients

    1 lb flank steak
    1 tbsp olive oil
    1 cup chopped onions
    2 cloves garlic
    1/2 cup green peppers
    1 tbsp of cumin powder
    1/2 cup green olives
    1 cup cooking wine or 1 cup beef broth
    1 cup tomato sauce
    Salt & Pepper to taste

Directions

Cook flank steak in enough water to cover until tender. Remove and let cool but save the broth. Shred and set aside. In a large skillet pour in the olive oil, onions and green peppers and sauté until tender. Add the garlic and cumin sautéing them on low heat until tender about 2 minutes. Add green olives and tomato sauce cooking them for 2 to 3 minutes, then adding the wine and the broth from the meat. Add the meat back into the skillet, stir and heat. Add salt and pepper to taste. Cook rice as directed. Serve meat over 1/2 cup of rice.
